(XBOX 360) Hold down A to defend with your selected player (if you are behind the man with the ball and you hold it down too long you are likely to foul).
Hold down B to call an unselected player to either assist with the defending or to defend alone while you take the selected player elsewhere (i.e. to mark the running man)
Without doing the above hold left trigger while you move the left thumbstick to 'jockey' (pretty tricky to do effectively)
Fifa 10 is annoying at leaving defenses wide open. Only thing I can offer is for opposition like Liverpool. Man-mark (in the options field) Fernando Torres. 5-3-2 can make this more effective if oppo has 4-4-2 and you want both strikers man marked.
